I have an 02 Wrangler 3.73 rear with 32s. It rarely takes more than 15 gallons. When the light comes on I know I am good for at least 50 miles without sweating much. I usually average average 15mpg. Switched from M/Ts recently to A/Ts not much of a difference, however, Last weekend coming back from Boston to NY I filled tires to 35 psi 260 miles on 15 gallons or 17.3 mpg to my surprise. Top down is a whole another issue....13 on highway at 75mph if I am lucky.

Anyway to get to the story, back when I was running 30s (stock and gas was 99 cents) I would typically get 17-19 mpg. One time I was coming back from a casino at 4am with 4 people in my car, and I let me buddy drive. Well, I fell asleep and woke up and as we were pulling in the gas station it was something above 300...he was really sweating..I think it was 40 miles between stops

I drove my 97 TJ on the autobahn everadyy for 3 years with 31 in BF Goodrich TA/KO's. Both in winter and in summer with no problems. Safety wasnt a issue never felt safer even at Autobahn speed or as fast as Jeep could take me. Also was a 4 in lift on that Jeep. As far as handling with all the Jeeps I've owned all I can say is what I can't do in a Jeep I wouldnt try in any other vehicle either.
